Coconut Omelet
Ingredients:
½ cup grated coconut
½ cup ground pork
1 piece diced sweet potatoes
2 pieces medium sized chicken eggs
1 piece onions chopped
1 clove garlic minced
Salt and pepper to taste
Procedure:
Sauté onions, garlic and ground pork in a pan. Add in the diced sweet potatoes and coconuts. Season with salt and pepper. Cook until all the ingredients are tender and set aside.
In a bowl, beat the eggs and fry in a non-stick pan and top with the above ingredients on one side of the egg and then fold the egg making sure that the sautéed ingredients are covered. Flip the omelet to the other side to brown.
