Leche Flan

One of the well-loved desserts by the Filipinos is Leche Flan; and there are a lot of versions of it which is typical of any Filipino dish. Unlike other nationalities which somehow have standardized recipes of their dishes, Filipinos have their own family recipe which makes it an adventure to eat from one family to another. I usually notice this when I attend fiestas at the barrios, though not a pleasant adventure every time. Anyways, here are just two of the versions out there:


 

  1. LECHE FLAN ( EGG YOLK)


 

INGREDIENTS:

10pcs egg yolk

1 can evaporated milk (about a cup)

1can condensed milk (about a cup)

1 ½ cup of white sugar

1tbsp lemon rind or 1tbsp vanilla extract


 

PROCEDURE:

Dissolve the sugar in evaporated milk, add in the egg yolk and the condensed milk and mix well until sugar and egg yolk are dissolved. Strain the mixture and add-in the lemon rind or vanilla extract and mix well. Pour in a pan with sugar syrup and steam until done.


 

  1. LECHE FLAN (EGG WHITE)


 

INGREDIENTS:

10pcs egg white

1small can of evaporated milk or ½ cup evaporated milk

½ cup white granulated sugar


 

PROCEDURE:

Dissolve well the sugar in egg white and milk. Strain the mixture and pour in a pan with sugar syrup. Steam until done. Raisins may also be added if desired.


 

SUGAR SYRUP:


 

INGREDIENTS:

1cup white granulated sugar

1cup water


 

PROCEDURE:

In a saucepan, let water and sugar boil until golden brown color and with thick consistency. NOTE: Do not stir. Pour in the prepared pans.
