PASTELITOS DE PESCADO
FIESTA SPECIAL
Ingredients:
4-cups flour
12-tablespoons butter
4 egg yolks
1-teaspoon sugar
1-teaspoon salt
Procedure:
1) Sift flour, salt and sugar. Work in the butter with tips of the fingers and fold in the well-beaten yolks of 4 eggs.
2) Sprinkle with enough cold water to bring the mass together and work very lightly with the fingers.
3) Cut into 2 equal parts. One part spread evenly the filling, made as follows:
Ingredients:
1 onion, chopped
2 tomatoes, roasted, skin and seed removed, and chopped fine
2-cups flaked fish
3 Vienna sausages, chopped fine
4-tablespoons grated cheese
4-tablespoons chopped ham
Salt and pepper to taste
Procedure:
(i) Sauté the onion and tomato in butter.
(ii) Add the fish, sausage and ham, and cook for 3 minutes longer. Then add the grated cheese.
(iii) Season to taste.
(iv) Cover with the other sheet of dough rolled out to 1/3-inch thick and press gently with a rolling pin.
(v) Cut in rectangles 3-inches long and 1-inch wide.
(vi) Place in a buttered and floured pan, brush with lightly beaten yolks of eggs, and bake in a moderate oven until brown.
