Chocolate Vanilla Timabales


CHOCOLATE VANILLA TIMBALES

LOW CALORIE DESSERTS

This chocolate dessert is light and a refreshing one.

Ingredients:
Serves6
350ml/ 12fl oz/ 1½ cups semi-skimmed milk
30ml/ 2-tbsp/ cocoa butter
2 eggs
5ml/ 1tsp caster sugar
15ml/ 1 tbsp/ 1sachet powdered gelantine, or alternative
1 sprig of mint

For the sauce
115g/ 4oz/ ½ cup light Greek-style yogurt
2.5ml/ ½ tsp vanilla essence
Extra cocoa powder, to sprinkle

Procedure:
1. Place the milk and cocoa in a saucepan and stir until the milk is boiling. Separate the eggs and beat the egg yolks with the vanilla and sugar in a bowl, until the mixture is pale and smooth. Gradually pour in the chocolate milk, beating well.
2. Return the mixture to the pan and stir constantly over a gentle heat, without boiling, until it’s slightly thickened and smooth. Dissolve the gelatine in 45ml/ 3tbsp of hot water and then quickly stir it into the milk mixture. Let cool until it’s on the point of setting.
3. Whisk the egg whites until they hold soft peaks; Fold the egg whites quickly into the milk mixture. Spoon the timbale mixture into six individual moulds and chill them until set.
4. To serve, run a knife around the edge, dip the moulds quickly into hot water, turn out the chocolate timbales on to serving plates, and decorate with a sprig of mint. For the sauce, stir together the yogurt and vanilla, spoon on to plates and sprinkle with a little more cocoa powder.
