BUKO PASTELITOS


Ingredients:

2-cups flour
½-cup shortening
4-tablespoons water
½-teaspoon baking powder
1-teaspoon salt


Procedure:
1. Sift dry ingredients, cut in shortening and add the water little by little.
2. Roll thin on floured board.
3. Cut into small squares.


Filling:

Ingredients:

1-cup shredded soft coconut flesh
2/3-cup sugar
1-tablespoon flour
½-cup milk
1-tablespoon butter
1-piece egg yolk


Procedure:

1. Mix coconut, sugar and milk. Cook until very thick.
2. Stir while cooking. Add the egg yolk, butter and flour.
3. Mix thoroughly. Cook for 5-minutes more, and then remove from fire.
4. Place a small amount between two squares of dough.
5. Brush the top with egg yolk and bake in hot oven until brown.
