BANANA BLOSSOMS with COCONUT MILK

BANANA BLOSSOM WITH COCONUT MILK
Ingredients:
2 banana blossoms
1 cup pure coconut milk
2 tablespoons vinegar
¼ cup sliced tomatoes
¼ cup sliced onion
2 cloves garlic, crushed
1 tablespoon cooking oil
Salt and pepper to taste
Procedure:
1. Remove the tough covering of the blossoms. Slice thin crosswise.
2. Add 2 tablespoons coarse salt and squeeze off bitter juice.
3. Rinse in water and squeeze dry. Set aside
4. Heat oil in skillet and sauté garlic light brown. Add onions then the tomatoes.
5. Cook for about 3 minutes.
6. Add banana blossoms and vinegar and bring to a boil without stirring.
7. Simmer for another 3 minutes. Add salt and pepper to taste and stir.
8. Continue cooking until banana blossoms is tender.
9. Add pure coconut cream and turn off the heat.
I got this recipe from Lutuing Pilipino book, but I forgot the author though, I only wrote it in my notes in college. I decided to post the recipe here, since it is very rarely that I see banana blossoms with coconut milk. I still have to try this one.
