ARROZ A LA FILIPINA

Ingredients:

½ cup boiled rice (sticky variety)
½ cup boiled regular rice
1-small chicken
3-cloves garlic
Small onion
3-ripe tomatoes
1-cup water
3 tbsp lard
3-medium sized green pepper
1-small package raisins
1-hard-cooked egg
Annatto seeds
Salt and pepper

Procedure:

1. Dress the chicken and cut into small pieces.
2. Slice the tomatoes and the onion. Soak the annatto in little amount of water and set aside.
3. Sauté the garlic, onion, tomatoes, and chicken. Add salt and pepper to taste. Cover.
4. When chicken is brown add water and cook until tender. Then add the sliced pepper and cook for a few minutes.
5. Add the annatto water for coloring and then boiled rice, sticky rice and raisins. Stir the mixture from time to time to prevent burning.
6. Continue cooking on low heat.
7. Garnish with hard-cooked eggs.

Although this recipe originates from the Spanish cuisine, I consider this as a Filipino dish since it's a traditional food served on special occasions.I got this recipe from my notes in college.
