Sinanglay

This recipe is taken from the book entitiled, Lutuing Pilipino ni Aling Charing.
A sinanglay is basically a stuffed fish with vegetable and coconut milk.
The ingredients are as follows.
1 dalag/tilapia (medium size)
1 coconut (grated)
petsay leaves
2 pieces medium sized onions
4 medium sized tomatoes
4 cloves garlic
1 tablespoon minced ginger
Procedure:
1. Clean the fish well. Season with salt and pepper.
2. Chop onions, tomatoes, garlic and ginger and mix them well, and add coconut milk.
3. Stuff the mixture in the butterflied dalag/tilapia and cover the fish with petsay leaves to keep the vegetable mixture inside the fish.
4. Put the covered fish inside a casserole and pour in the remaining 1 cup of coconut milk.
5. Cover and let boil about 20 minutes.
